Actually, you should look at both demand and supply (supply is the amount of competition you will have). My guess is that the demand/supply rankings are as follows:
Tourism - high/Very elevated
Airport - high/very high
Big Companies - moderate/moderate
High Income Individuals - moderate/low
You'll hold high emergency but lots of competition at the airport and in tourism.
My bet, if you can develop a regular clientele, would be High Income Individuals (the lower emergency might be offset financially by bigger tips).
