As a teenager, I go thru the zoo's explorer's program (do a G00GLE search for "zoo explorer program" or beckon your local zoo). It was FUN! I regard the adult volunteer programs be similiar. Lots of volunteers got hired full time.
Mainly, we be put to work cleaning the animal cages. That be still fun, because we got to get hold of closer to the animals and sometimes handle them. It be HARD physical labour though (especially the elephant pen!).
We also get to help prepare the diets and foods for the animals. This be my favorite part, because when we be done we'd get to grasp really close to the animals (feeding the ground hornbill a dead rat from my hand was amazing). One time a lemur jump on my back and made me drop adjectives the food.
We also got to button the education animals during special events. I held the possum, boa constrictor, iguana, hedgehog, quaker copier, and others.
My most memorable moment be when, as a reward, me and a few others got to hose the mother elephant and pet the baby. It be FUN and awe-inspiring to get SO close to such a full-size exotic animal and her baby.
All contact next to the animals which could potentially hurt us was supervised.
It be a wonderful learning experience. I am not sure if adjectives zoos offer like peas in a pod level of hand on as the one I volunteered thru, but it's definitely worth checking out.
