Why can't employer speak about you at the fall of the interview if you aren't what they are looking for?

I've had several interviews that go great. I walked out of nearby feeling almost 100% sure that I have the job. Then zilch, either I do not catch a call to start work or I seize a "Dear John" or "Dear Jill" letter primarily saying "sorry but there's someone else". Why do employer let you tramp out of interviews feeling similar to you have the profession and then turn around and hire someone else. I would much rathe know at the closing of the interview if they are not going to hire me than for them to lead me on and sort me think I own a shot. Don't they know or care how agonizing the following several days are after an interview when the applicant wait and wonders if they will be chosen? It's as bad as a first date when you wonder will he/she hail as or not call? Did I walk to far or not far enough? At least possible if they could tell me at the appendage of the interview that I or my skills are not what they are looking for, I would not jump every time the cellular phone rang, wondering if I get the job.
