Bachelors of Science - More mathematic/analytical required econ classes. Downside is my semesters would be complete to the max and I'd be taking 5-6 classes per semester (3 semesters left).

Consider CRST who will hire you both and train you for free at Kirkwood Community College and wages to bus you there for a 6 mo. committment to drive for them. That is where on earth I went to institution. They do team driving.
Many companies will train you. Just trade name sure you can afford to be at school for 3 weeks to a month and after work for a week or two with no income. You will draw from some, but not much at first. But, I now fashion 50,000 a year and went to college in Oct 05. You can do this!!
