What can a deli department do to increase sales?

I work within a grocery store. Our deli department is struggling tremendously in sale. Our store is a very nice but our clientele is on fixed incomes and foodstamps. Does anyone own any good suggestions to bolster sale and increase bottom line profits?


Answers: First piece to consider - is a deli the right type of department to have if your customers are on food stamps?

You could try...
Dropping your prices.
Competitions/prizes/giveaways.
Free sample.
Cookery/prep demonstrations/lessons.
Try selling less expensive product. Even drain the price on the product that you already sell. It might hurt your gross, but it will definetly aid sales. Focus your specials more strongly around the first week of the month when the welfare checks come out. Lower prices until you build a strong customer bottom, and hope that they stick around.
Most importantly, find out what the customers are looking for, and try to accomodate them.
I managed a restaurant near the same problem.

1. Can you switch to a cheaper cheese? Most expensive item for you guys I bet.

2. Advertise, sooner, by having coupons come out on the first of the month. That method people next to welfare checks will come before their money is gone.

3. Create fliers. To lower daily costs, have 4 fit on one page. The flier should publicize by saying something close to "Beat the lunch rush with our fresh, succulent sandwiches."
On the bottom, remind them in the order of your excellent deal on platters for business meeting. Put them on all the cars of adjectives nearby business. Then they'll turn there for lunch!

4. Same as above but lower the price and afford them a discount, so it's a coupon actually. Perhaps on the 15th of the month.

5. Make it the step to place for banquets, party, superbowl, etc. Maybe put fliers talking almost "Feed the crew this superbowl with our jamboree platter!" Put these in the beer subsection!

If your clients can't afford your products, can the store start targeting a better bazaar?

If not, my advice would be to shift find a better company to work for.

Answers: Depends on the individual company. Titles are just that. They don't define who is the one with the most influence, bucks, or responsibility.
Chief Executive Office has the most responsibility. This person proposes ideas to the president and then relays the presidents message or input into the company meanwhile overseeing/ monitoring finances,production and projections. A chairmen is simply someone who has a knowledge of the companies goals and proposes financial, product, and project ideas/advice.
