So buy her a private policy, or marry her and tag on her to yours.
Your only choice is if your employer chooses to offer Domestic Partner coverage *and* your relationship meet the criteria for domestic partnership as defined by your employer.
Keep in mind that the majority of employer do not offer Domestic Partner coverage. In the event that yours does, be prepared to show documentation that you draw together the requirements. (Example - sign a notarized affidavit of your relationship, show that you reside at the same address, show proof of cohesive ownership such as filing taxes together, reciprocal mortgage, joint edge statements, etc...whatever your employer happen to require.)
Also keep contained by mind that the way your paycheck is calculated will switch - health insurance for domestic partner is not a pre-tax benefit. (If your employer offers domestic partner benefits, they should be clearly competent to explain how this works to you.)
