B/c I just switched (again), and I'm sick of the clutter contained by my file cabinet -- is in attendance some kind of time spell (like 7 years for tax stuff), or can I simply shred it all from the previous companies?

Answers: You need to hang on to policies past the statute of limitations contained by your state - until enough time have passed, that you can't be sued for anything that might have happen during the policy period, even if you didn't know give or take a few it (like the mailman slipping on your front porch steps while delivering messages - if he sues you for pain and suffering because you didn't own a handrail, you NEED to know which policy was surrounded by effect at the time!)
