The company will know because they have access to documentation made by the morgs and death paperwork.

They don't unless you make some provision for them to be notify. because you dont turn up for work, however if you are retired the funeral directors will look into previous employment for a will and will be able to find it.
That's the executor's responsibility. When making a will, you should appoint an 'executor' who would know if you popped past its sell-by date, and see that your wishes were carried out. Not much point making a will if you don't steal steps to see that it would be obeyed, is here?
Why would you "write out a will with a company"? The proper piece to do when you execute a will is to let your subsequent of kin know about it and where on earth it is kept. If you don't want next-of-kin to know you have made will, write reminder addressed to them, and donate with any other papers that they will hold to examine after your death, relating them where will is. Otherwise your will will be a surplus of time, and it will be assumed you died intestate.
I'm pretty sure that they have someone checking the obits everyday, result in if you read the personals or public notices, they sometimes hold ads asking if anyone know this person etc etc., its to breed sure their are no outstanding debts and if their is any family out in that that could be an heir and they dont know, hope that help, goodluck!
