Answers: Hi I work in the travel industry and deal in travel insurance everyday.
You need to put the first date you originate your travels. But in an event of invalidation from the day you purchase your policy consequently you are automatically covered if you had to abolish your trip in the event of medical etc etc.

In the USA you would put the afternoon that you're leaving your home to start your trip as your departure date and the day that you're returning to your home as your return date. Travel insurance policies usually enjoy 2 effective date; one for the trip cancellation which is the daytime after you purchase the insurance, and the other for the post departure coverage (medical, baggage, trip deferral, etc) which is the departure date that you've indicated. Yes, put the start date as the first day of your hol - the time you travel. You are insured for luggage loss etc from then to the termination of the holiday, but if you have to revoke due to illness, and the bad health starts before the first date of the hol, you will still be covered at the start if you see what I indicate. You need to check the exclusions to see if any specific things are excluded (eg sometimes you can dissolve if a parent/child is ill and you enjoy to look after them, rather than yourself individual ill)
Since it is just for travel insurance, I would put the date as the earliest starting moment of your holiday. For example 5pm on the finishing day of working past the holiday. Yeah, Peaches had it pretty much spot on. Assuming you hold a good purpose to cancel unsurprisingly (medical = OK, death within the family usually = OK, not one bothered anymore = tough).
