We've just started import Frozen Pork Bellies into Asia which we imported from France via a broker contained by Canada. The first container was sold and permitted without complaints, the second one be half consumed and afterwards the buyer complained that the remaining half nouns was too fatty and not 'B' Grade. I've be searching over the internet on how to verify if the bellies are indeed 'B' Grade as the wholesaler claims. I have not found any literature on this grade format. Can entities such as the SGS check the shipment before it is shipped to us? The French supplier is trying to dismiss the complaint by saw that it is pork thus can be fattier than usual.... but there seem to be a standard 'B' Grade that is above-board. Thus, my question is where on earth can I find this so called Grading system and how does one check if the meat pass the Grade? Kindly send links to any literature that you guys may enjoy.
