Once you figure that out it can be figure. Night shift gets afterhours benefits. The evening shift recompense after hours benefit of over time only after 8pm, and regular daylight shift. You got 5 days a week cover approaching that.
8am - 4:30pm (1/2 hour break).
4pm - midnight+
midnight - 8am
Weekend you may negotiate a 2 X 12 hour shifts.

3 days of 12 hour shift X 2

Remaining devide the weekend of 4 hour shift each
Hospitals use a 10 hour shifts but I am not sure how this will work for you.
steal a look hours 8am-5pm employee X 5 days
midday to 10pm 10 X 4 days (overlap during busy hours)
night 10pm to 8am X 4 days
Same over Sat, Sun, Mon but require an added employee... or someone to work over time.
