Pay-roll, You want to enjoy over the daily, weekly, monthly, even annual quota (quota is expenses to remuneration the workers and buy new table, cloths, etc.). having over the quota can benefit you because you may return with more money than other jobs. But you must also preserve the food prices close to low or medium so that you will bring back return customers (and restaurant competition, so watch other restaurant prices) and satisfactory to satisfy the quota.

I would probably voice how they manage to wages for bills on the restaurant, the supplies that they will have to buy. How to attract race to work for them, pay for their workforce. The condition of their restaurant, costumer's satisfaction, working conditions. Prices of their food, hour's of workforce shifts, taste of their food. Good mark for their restaurant, their location of where their restaurant should be placed at. Employees experience near food, probably entertainment, finally competition with other restaurants.
